I want to make a Christmas cake for my mother and she is a diabetic, I am also very happy to treat Christmas recipes that are free of sugar, I thank you in advance.

Christmas cake for diabetics

Makes 36 servings.
Metric / Imperial
175g/6oz sultanas
175g/6oz raisins
100g/4oz Currants
50g/2oz glacé cherries, chopped
275ml / ½ liter of cold tea
200g/7oz polyunsaturated margarine
50g/2oz ground almonds
275g/10oz wholemeal flour
Baking powder 2x5ml Sp/2tsp
Blend spices Sp/2tsp 2x5ml
3 size 3 eggs, beaten
Zest of one lemon
50g/2oz almonds, chopped
Recipe in the slot following: --




1. Place all nuts in a bowl with cold tea and let the fruits of fat overnight.

Grated rind and juice of 1 lemon
5 tbsp sunflower oil
1 egg
75g (2 ½ ounces) sugar, molasses
115 (g 4 oz) self rising flour
115 g (4 oz) integral self rising flour
1 teaspoon baking powder tea
2 v. teaspoon spice mixture
3-4 tbsp low-fat milk, as needed

Place all nuts in a medium saucepan. Add the apple juice, heat and slowly bring to a boil over medium heat. Cover and cook gently for 3-4 minutes or until the fruit begins to absorb fluid.
Remove pan from oven and letfall until it is completely cooled. Add pecans, ginger and lemon rind and juice.
Preheat oven to 150 ° C (300 ° F thermostat 2). Brush 23 cm (9 inches) ring box with a little oil. In a bowl, sunflower oil, eggs and sugar, mixing until fluffy.

You can follow almost any recipe suitable for a diabetic and increase the use of artificial sweeteners instead of real sugar. Change the recipe calls for brown sugar may be a little suspicious, but the basic cake and pie recipes are very good.
